I counted the 3 worst bugs in the game. Lap times e.g. in Melbourne so that drivers can achieve a time below 1:30,000. Error in pit stops so that Minardi doesn't have to wait for other teams from the 1997 season standings to leave the pit lane. Williams drivers have priority over everyone else. Plus, the last mistake is when the AI driver goes for one stop, he reaches the speed as if he had soft tires on.

Yeah the pitstop bug is the worst by far. But the best workaround is to second guess when other teams are not pitting and their position on the track. But it can destroy your race if you need to come in for tyres when the track conditions change and everybody starts coming in to the pits. But nothing is ever easy in Formula 1 except for the leaders. That's the rewards of being the fastest.
The AI one stop problem must be a bug in the race speed calculation. There is a bunch of code that will randomly set the strategies for the field of cars at the start of each race (e.g. there will always be a few cars on three stop).
Not sure on the lap times bug but there is a bug where some cars jump the pitlane entry (when overtaking or unable to come in) and "lose" their position on track, causing them to jump ahead to the next track segment and "gain an unfair advantage of 2s or 3s. If we ever get into understanding the track editor, perhaps some of these bugs can be fixed, if we can define the track segments more accurately.

It's true, this bug with jumping over one fragment of the track is very annoying. Probably the most famous one is on the start straight in Catalunya. After all, he's still the best F1 manager ever, the most complex. Grand Prix Manager was an interesting game but unfortunately there was no negotiations with sponsors and some other things. Plus the racing was pretty boring.

And it only happens for the first stint, weirdly. My theory was: the race start fuel is actually measured in laps, not kilos, for the AI cars. So instead of 20 laps worth of fuel, they get 20 kilos, but they never actually run out of fuel. This is fixed when they pit and load the correct amount in liters. It might be something else, but it fitted pretty well with my observations. I once had a French GP where Coulthard seemed to pull away by 0.5s from Hakkinen, which surprised me because you rarely get those kind of gaps between teammates during the first stint (because of the bug). He was on a 3-stop, Hakkinen on a 1-stop, they pitted in laps 13 and 37, or something like that: 25 kilos of difference could account for that kind of gap, which you'll rarely see because you don't usually get such different strategies.

That's interesting. My observations show that AI runs on softs, regardless of whether it makes 1-2 or 3 stops. What I mean is that they have the same pace as if they were running on soft tires instead of hard tires.
